Hello lovelies!

This weekend I took a lot of time to relax and get some rest (& I may or may not have watched 13+ episodes of Gilmore Girls). I also did this:

Yep, that’s Chris – hanging out at my house for the third time…we may as well turn the place into a tattoo shop. Chris added to one of my tattoos in April and he gave Stephanie her first ever tattoo in May.







Finished! These tattoos are scripture references (Isaiah 30:21 & Isaiah 48:17) and I am fully in love with them. I wanted them to almost look like coordinates and I only wanted numbers, no letters – so this is what I came up with. I couldn’t be more pleased. Thanks Chris for the solid tattoos – and Steph for taking photos!

I love Instagram a lot lot lot. I’ve been using it on my iPhone for about 7 months, and I post photos almost everyday (if you would like to follow me, my user name is: stephanie_may ). I love following friends and blog authors that I admire. It’s so fun to see little glimpses into their daily adventures.
One of the people I follow is Miss James, and she invited us to participate in a Photo A Day Challenge. I saw Bonnie Gregory at a Christmas concert this past December and could not get over how much I loved her hair. She is the sister of a good family friend (of whom I may or may not have annoyed with talking about said sister’s hair…endlessly). Even a few days later, I said to one of my sister’s, “Did you see Gwen’s sister at the concert? I LOVE her hair!”
I was then told about The Horse Latitudes – and I have been hooked.
According to her website, “Bonnie Gregory aka The Horse Latitudes is a landlocked sailor writing love songs to the sea. Her music, best described as “seafolk”, is inspired by personal shipwrecks, sea turtles in the morning and other basic longings.” You’re curious already, right?

Her voice is so lovely and with it being only her and an acoustic guitar, there is not a lot of fuss – just pure, raw beauty.
This is my current favorite song of hers. I have watched this video a lot…it might be because the first line is, “I can tell you’ve been home, by the smell of coffee”…or maybe it’s just a gorgeous song – but the coffee thing can’t hurt.
Another great song and a beautiful video. I love how simple the videos are – they let the music speak for itself.

This week has flown by! I have been working on some new listings for my vintage kid’s clothing shop – FIBBIE. Head over and take a look – there’s lots more to come!

Mexican food is the best. That may be a bold statement, but I stand behind it 100%. I could eat Mexican food everyday for the rest of my life and be completely content (this is probably thanks to my dad, who makes a mean Mexican meal and did so all of our growing up years).
Last night I made migas – and it was SO yummy. Migas is super easy to make and there are so many variations (mine was more Tex-Mex than authentic Mexican because I had a lot of eggs in the fridge), you can literally put anything into that you want. The main point, in my opinion, are the tortillas – beyond that, get creative!

(General) Ingredients:
4 corn tortillas (corn tortillas make me a happy girl)
2 tbsp. extra virgin olive oil
1 small onion (I only used about 1/3 chopped)
8 eggs (beaten)
1 small tomato (chopped)
1 avocado (chopped or sliced, however you like it)
1 c. monterey jack cheese
1 lime
cilantro
Step 1: Keep the tortillas stacked and cut them into bite-size pieces (or tear them, whichever you prefer).
Step 2: Put the 2 tbsp. olive oil in a skillet on medium heat and add the tortillas. Cook these for 5-6 minutes until golden brown and turning slightly cripsy.
Step 3: Add onion (and whatever other “harder” veggies you want that need to soften a bit – peppers, fresh garlic, etc.). Cook these 5-6 minutes until they begin to soften.
Step 4: Add 8 eggs, a little salt and pepper, and scramble
Step 5: When the eggs are almost finished cooking, add “softer” veggies like tomatoes, green chiles, mushrooms, etc.
Step 6: Last, add 1 cup monterey jack cheese – mix it in until it just begins to melt and take the skillet off the burner
Step 7: Squeeze a little lime juice over the whole pan, serve it up and add some avocado, sour cream and cilantro to your heart’s content.

Seriously…Yum.

Today I am working on some new FIBBIE listings! I took a major break over the past few months, and I am ready to dive back in head-first. I can’t believe that I opened the shop over 9 months ago! I have loads and loads of cute vintage pieces to list, and even some that I completely forgot about!

My favorite part of doing FIBBIE is getting to shop for the itty bitty clothing and toys. Since my youngest is now 4 1/2, I don’t get to buy cute baby clothes anymore. Selling items to parents for their babies is the best!

This is my little helper while I work. She really loves to sit in my lap:)

This is my other helper. She was drawing pictures at the table and called me in to show me her layout on the fridge. And yes, this is the same dress she wore in this post. It’s one of her favorites right now.

Hi! Sorry it’s been so quiet the past few days. We’ve been busy and forgetful:)
I’ve still been having fun with our new Christmas puppy – Tuppy. She is seriously the sweetest little doggie! Since she is so young (not yet 7 weeks), she has to be fed 3-4 times a day, and has to go outside every 2-3 hours. I’ve never had a dog this young, so it is definitely more work than I imagined! But she’s worth it because I just love her to pieces:)
Gavin and Guini are back in school all this week, and I’ve got a long to-do list. I’m going to be re-decorating their whole room over the next few weeks, so I will be sharing photos of that when it’s complete. I’m also hoping to finally finish our living room partial remodel….maybe by the end of the month? We shall see:)
